Scotch whisky from Speyside, the Highlands, the Islands and beyond — blends, single malts and blended malts, from everyday mixing bottles to collector releases containing whisky from distilleries that no longer exist.

What Makes It Scotch

Scotch is a legal definition, not a style. It must be made in Scotland, matured there for at least three years in oak, and bottled at no less than 40% ABV. Nothing may be added except water and caramel colouring.

Everything else — the region, the cask, the age, the peat — is where the differences come from.

Blend, Single Malt, Blended Malt

• Blended Scotch — malt and grain whisky from several distilleries. Built for consistency and for mixing. Where most people start, and what most Scotch sold in the world is.
• Single malt — 100% malted barley from one distillery. Carries the character of one place.
• Blended malt — malts from several distilleries, no grain whisky at all. Rarer, and often overlooked.

The Regions

• Speyside — the largest region by far. Fruity, approachable, often sherry-influenced. The easiest place to begin.
• Highland — broad and varied. Typically fuller and richer than Speyside.
• Islands — maritime: sea salt, pepper and smoke without Islay's intensity.
• Islay — heavily peated. An acquired taste, and worth acquiring.
• Lowland — light and gentle, often triple distilled.

The Cask Usually Matters More Than the Age

Most of a whisky's colour and much of its flavour comes from the wood it sat in.

• Ex-bourbon — vanilla, honey, citrus. Lighter.
• Sherry-seasoned — dried fruit, chocolate, spice. Richer and darker.
• Pedro Ximénez — the sweetest sherry cask. Raisin and honey.
• Rum, wine and port finishes — increasingly common, and they change a whisky considerably.

Two whiskies of the same age from the same distillery can taste entirely different depending on the cask. It is often the more useful line on a label than the age statement.

Which Scotch Should You Buy?

• Starting out: a 12-year blended Scotch. Smooth, forgiving, and cheap enough to experiment with.
• For highballs: a blend. Character that survives soda, at a price that survives a crowd.
• First single malt: Speyside. Fruity and unchallenging.
• If you want smoke: an Island or Islay malt, or a peated blend as a gentler introduction.
• For a gift: an age-stated single malt or a premium blend — both come boxed and neither needs explaining.
• For a collector: look for closed-distillery stock. Brora and Port Ellen both shut in 1983 and what remains cannot be replaced.

How to Drink It in This Climate

The highball is underrated: one part whisky, three parts cold soda, a tall glass packed with ice, stirred once. It suits Philippine heat far better than a neat pour.

For sipping, use a nosing glass rather than a tumbler, and add a few drops of water rather than ice — water opens a whisky up, cold shuts it down.

Frequently Asked Questions

Does the age statement cover the whole bottle?
It refers to the youngest whisky in it. A 12 Year Old contains nothing younger than twelve years, and usually a good deal that is older.

Is single malt better than blended?
Different, not better. A good blend beats a mediocre malt. Blends are built for consistency and mixing; malts carry more individual character.

What does peated mean?
Barley dried over a peat fire before malting, which gives smoky, medicinal, sometimes iodine-like flavours. Islay is the home of it. It divides opinion sharply.

Should I add ice or water?
Water — a few drops. Ice suppresses the aromatics and keeps diluting as it melts. If you want it cold, use one large cube.
