Why Melbourne Changes the Whisky

Melbourne's climate swings hard and often. Those temperature changes push spirit in and out of the wood far faster than Scotland's steady cool does, which is why a Starward of a few years develops colour and depth that would take a Scotch considerably longer.

The Range — Three Directions

• Nova — single malt matured entirely in Australian red wine barrels: shiraz, cabernet and pinot noir. Red berries, chocolate and soft spice. The signature bottle.
• Solera — single malt matured in apera barrels, Australia's sherry-style fortified wine, using the solera system where the vessel is never fully emptied. Raisin, pineapple and caramel. The richest.
• Two-Fold — a double grain whisky rather than a single malt: wheat and malted barley together, aged in red wine barrels. Softer and lighter, and the one built for mixing.

Which Starward Should You Buy?

• First Starward: Nova. It shows what the wine barrels do most clearly.
• If you like sherried whisky: Solera.
• For highballs and cocktails: Two-Fold.

The Crossover Bottle

Starward is unusual in genuinely working in cocktails — the red fruit gives a whisky sour or an Old Fashioned a character no Scotch will. It is also the easiest whisky to hand a wine drinker.
