Matured in Apera Barrels Using the Solera System
Apera is what Australia calls its sherry-style fortified wine, and Starward Solera matures entirely in those barrels — then uses the solera system, where the vessel is never fully emptied, so every batch carries a trace of the ones before it.
The technique is borrowed from Jerez, and it does two things: it builds complexity, and it makes each release consistent with the last. Combined with Melbourne's wide temperature swings, which drive the spirit in and out of the wood, it produces considerable depth in a short time.
