Why the Cordilleras Matter
Whisky is shaped by where it's made, and the Cordilleras are a very different proposition from Speyside. A warm climate pushes spirit in and out of the barrel far faster than Scotland's steady cool does — which is why a young Filipino malt can carry depth a Scotch would need considerably longer to develop. The same effect has put Taiwanese and Australian whisky on the map over the last decade.

- Avallach Craft Single Malt — the honeyed one. Vanilla, toasted oak and a genuine coconut note that only shows up with tropical maturation, moving into a smooth caramel finish.
- Spectre 431 Craft Single Malt — the smoky one. Opens with a smoky veil over caramel and vanilla, unfolds into dark chocolate and marmalade, finishes with dried fruit and a whisper of ginger.
Which One Should You Buy?
- Your first Witchcraft: Avallach. Honeyed and approachable, nothing to acclimatise to.
- If you drink peated whisky: Spectre 431 — smoke, dark chocolate and marmalade.
- As a gift for a visitor to the Philippines: either — a Cordilleran spirit is a better souvenir than an imported bottle.
How to Serve
Neat, in a nosing glass, with a few drops of water rather than ice — water opens a spirit up, cold shuts it down.
Frequently Asked Questions
Is Filipino whisky any good?
The category is young — Witchcraft has been distilling since 2015 — but the climate does real work. Tropical maturation develops flavour far faster than a temperate one, the same reason Taiwan's Kavalan has been taken seriously internationally.
What's the difference between Avallach and Spectre 431?
Both are single malts from the same distillery, in opposite directions. Avallach is honeyed — vanilla, coconut, caramel, no smoke. Spectre 431 is smoky, with dark chocolate and marmalade.
