Born From the Heart of the Highlands
Avallach is a union of two barrels — a single malt whiskey distilled from the finest barley and the purest spring water, aged with the character of the untamed Northern Philippine Highlands. Pure, bold and authentic: a whiskey born of place, refined through time, and shaped by the Cordilleran terroir.
It comes from Witchcraft Distillery, founded in 2015 by Master Distiller Jackson So after years of industry experience and travel spent learning distilling traditions. What began as a personal project shared with friends and family became the first single malt whiskey from the Northern Philippine Highlands.

Tasting Notes

How to Serve
Neat, in a nosing glass, with a few drops of water. The coconut note is unusual and worth looking for — it is a genuine marker of tropical maturation and it fades quickly with ice.
How It Differs From Spectre 431
Same distillery, two directions. Avallach is the honeyed one — vanilla, coconut, caramel, no smoke. Spectre 431 is the smoky one — dark chocolate, marmalade and a velvety smoke running through it. Avallach is the easier first pour; Spectre is the more complex.
