Rye is not a substitute for bourbon in a cocktail — in several classics, it's the original ingredient. The Manhattan and the Sazerac were both built around rye before bourbon became the more commonly available substitute. Rye's dryness balances the sweet vermouth in a Manhattan far better than bourbon's own sweetness does, and it stands up to the absinthe rinse in a Sazerac without getting lost.
