Don Papa is distilled from sugarcane grown on Negros Occidental — known locally as "Sugarlandia" for its sugar industry — and aged in the foothills of Mount Kanlaon. Genuine stock, delivered nationwide across the Philippines.
Why the Foothills of Mount Kanlaon
The volcano's elevation gives the ageing warehouse a cooler, more variable climate than lowland Negros — still warm enough to accelerate maturation well beyond what Scotland's climate allows, but with enough temperature swing to build real complexity into a rum that's still relatively young by Scotch standards.
