Single-Island Philippine Rum — From the Foothills of Mt Kanlaon
Don Papa is made on Negros Island, in the shadow of the active volcano Mt Kanlaon, where volcanic soil and a tropical climate produce some of the richest sugarcane anywhere. That cane is milled into black gold molasses, distilled, and aged seven years in the tropics.
Tropical ageing matters more than the number suggests. Heat accelerates maturation, so seven years in the Philippines does roughly what a couple of decades would do in Scotland — which is why this drinks far older than its age statement.
