Starward does something no Scottish distillery can: it matures whisky in barrels from Australian wineries — shiraz, cabernet and pinot noir — that arrive still wet with wine. No seasoning, no drying, straight from the winery to the distillery.
Melbourne's climate does the rest. Wild temperature swings push the spirit in and out of the wood far faster than Scotland's steady cool, which is why Nova develops this much colour and fruit in a few years.
