Eighteen years in a combination of Oloroso sherry casks and American oak bourbon barrels, then married in small batches rather than large ones. Small-batch marrying is slower and more expensive, and it is what keeps consistency at this age — where variation between casks becomes much more pronounced.
Baked apple, dried fruit and oak, with cinnamon and almond behind. Complex without being demanding.
