Whisky, Whiskey, and Why the Spelling Changes

Scotland, Japan, Canada and Australia spell it whisky. Ireland and the United States generally spell it whiskey. It tells you nothing about quality — only about where it was made.

The Main Styles, and What Separates Them

Scotch — blended

A mix of malt and grain whisky from several distilleries. Built for consistency and for mixing, and where most people start. A 12-year age statement refers to the youngest whisky in the blend, not the average.

Scotch — single malt

100% malted barley from one distillery. This is where regional character shows: Speyside tends to be fruity and approachable, Highland richer, and Island malts carry sea salt and peat smoke. Sherry-cask maturation adds dried fruit and chocolate; bourbon casks add vanilla and citrus.

Irish whiskey

Usually triple distilled where Scotch is distilled twice — each extra pass strips out more of the heavier compounds, which is why Irish whiskey is characteristically lighter and smoother. Rarely peated.

Bourbon and American whiskey

Bourbon must be at least 51% corn and aged in new charred oak — never reused — which is where the vanilla and caramel come from. Rye must be at least 51% rye and tastes drier and peppery. Tennessee whiskey adds a charcoal-mellowing step before barrelling.

Japanese whisky

Built on the Scotch model but generally lighter and more precise. Also the home of the highball, which is the best way to drink whisky in Philippine weather.

New world — Australia, Taiwan, the Philippines

The interesting corner of the shelf. Hot climates accelerate maturation dramatically, so a Taiwanese or Filipino whisky of a few years can reach a depth a Scotch would need well over a decade for. The cost is evaporation — these distilleries lose far more of each cask than a Scottish one does.

Which Whisky Should You Buy?

• Starting out: a blended Scotch or Irish whiskey. Smooth, forgiving, and cheap enough to experiment with.
• For highballs and mixing: blended Scotch, Japanese, or bourbon. Character that survives soda.
• For drinking neat: single malt. Speyside if you want fruit, Island if you want smoke.
• For cocktails: bourbon for an Old Fashioned, rye for a Manhattan.
• For a gift: an age-stated single malt or a well-known premium blend. Both come boxed and neither needs explaining.
• For something nobody expects: Taiwanese or Filipino single malt.

How to Drink It in This Climate

The highball deserves more respect than it gets. One part whisky, three parts cold soda, a tall glass packed with ice, stirred once. It is the default order in Japanese bars and it suits Philippine heat far better than a neat pour does.

For sipping, use a nosing glass rather than a tumbler, and add a few drops of water rather than ice — water opens a whisky up, cold shuts it down. Above 45% ABV, water is not optional.

Frequently Asked Questions

Does the age statement mean the whole bottle is that old?
No — it refers to the youngest whisky in the bottle. A 12 Year Old contains nothing younger than twelve years and usually a good deal that is older.

What is the difference between single malt and blended?
Single malt is 100% malted barley from one distillery. Blended Scotch mixes malt and grain whisky from several. Blended malt — rarer — mixes malts from several distilleries with no grain at all.

Should I add ice or water?
Water. A few drops open up the aromatics; ice suppresses them and dilutes as it melts. If you want it cold, use one large cube rather than several small ones.

Is more expensive always better?
No. Price tracks age, rarity and packaging as much as quality. Some of the best value in this catalogue sits between ₱1,500 and ₱3,000.
