Aged Like an Añejo, Filtered Clear

Cristalino is one of the more interesting things happening in tequila. The spirit is aged as a full añejo — over a year in oak — and then filtered to remove the colour while keeping the flavour the barrel gave it.

The result looks like a blanco and drinks like an añejo: clear in the glass, but with the vanilla, caramel and oak depth that only time in wood produces. It is a genuinely modern category, and Volcán's is among the better-regarded examples.
