What defines it is the finish: extra maturation exclusively in first-fill sherry casks. First-fill means the cask has held sherry and nothing else since — no previous whisky has stripped it — so the influence is far stronger than a refill cask gives.
The name refers to the bottle: no box, no unnecessary embellishment.
