Mortlach's distillation regime is genuinely strange. Rather than the standard two or three passes, the distillery runs a partial-distillation system that works out at 2.81 times — a figure that sounds like marketing but is a real consequence of how the stills are used.
The effect is the "meaty" Mortlach character: weighty, savoury and full-bodied where most Speyside malts are light and fruity. It is one of the few Speysides that surprises people.
The 12 Year Old is the entry point, combining ex-bourbon and ex-sherry maturation to balance the distillery's dried-fruit weight against fresh fruit and vanilla.
