The Macallan's reputation rests on wood. The distillery commissions its own casks — Spanish and American oak, air-dried for years, then seasoned with sherry in Jerez before a drop of whisky goes near them. Cask cost is reportedly the single largest expense in making Macallan, which is unusual, and it is why the whisky tastes the way it does.
Double Cask means both: European oak sherry casks for dried fruit and spice, American oak sherry casks for vanilla and sweetness. Twelve years married together.
