Kavalan started distilling in Yilan, Taiwan in 2005 — which by whisky standards is yesterday. The reason it is taken seriously is the climate. Taiwan's subtropical heat and humidity accelerate maturation dramatically, so a Kavalan of a few years develops the depth a Scotch would need well over a decade to reach. The trade-off is evaporation: Kavalan loses a far higher proportion of each cask than a Scottish distillery does.
Distillery Select No. 1 is the softer, fruit-led expression — tropical fruit, vanilla and warm spice with a silky texture.

How to Serve
Neat, in a nosing glass. A few drops of water lifts the tropical fruit. It is smooth enough to work over ice, and unlike most malts at this price it makes a genuinely good Highball — the fruit survives the soda.
How It Differs From No. 2
Same distillery, same strength, different character. No. 1 is fruit-led — tropical fruit and vanilla, softer. No. 2 is floral and herbal with more wood and spice. Neither is more premium; they are two directions from the same house.
