John Jameson established his method of whiskey making in 1780, and the distillery has stuck to it since. The defining feature is triple distillation — Scotch is distilled twice, Jameson three times — and every extra pass strips out more of the heavy compounds, which is why Irish whiskey is characteristically smoother and lighter than Scotch.
It blends traditional pot still whiskey with grain whiskey. No peat, no smoke, nothing to acclimatise to.
