Description

Espolón was built in the highlands of Jalisco as a tequila for Mexicans rather than for export — the name means "rooster's spur", and the label art is drawn in the style of José Guadalupe Posada, whose skeleton engravings became the imagery of Día de los Muertos. Look closely at the back label and there is a story panel; the rooster and the skeleton recur across the range.

Blanco is the unaged expression and the purest read on the agave. Highland agave tends to be sweeter and more floral than lowland, and with no barrel in the way, that comes through directly.

Tasting Notes

  • Colour: Clear with a platinum cast
  • Nose: Sweet agave, tropical fruit and lemon zest, a hint of pepper
  • Palate: Soft and light-bodied — bright agave, vanilla bean, grilled pineapple, spice
  • Finish: Clean and elegant, closing on pepper

How to Serve

This is the margarita bottle, and it is priced to be used rather than saved. It also makes an excellent paloma, where the grapefruit meets the citrus already in the spirit. Neat over ice works if you want to taste what highland agave does without oak.

Questions

How does it compare to more expensive blancos?
Espolón consistently punches above its price, which is why it is a bartender's default. At double the money you get refinement, not a different category of drink.

Blanco or Reposado for margaritas?
Blanco. The point of a margarita is bright agave against lime; six months of oak softens exactly what you want forward.
