Fresh Irish Cream and Irish Whiskey — the Original
Baileys is a marriage of fresh Irish cream, Irish whiskey and other spirits. It appeared in the 1970s and became popular quickly, partly because of its mild 17% ABV — roughly a third the strength of a spirit.
The technical achievement is less obvious but more important: Baileys solved the problem of cream curdling in alcohol. Many imitations followed once the formula proved it could be done, but this is the one that made the category exist.
Tasting Notes
- Nose: Fresh dairy cream, vanilla and a soft whiskey warmth
- Palate: Rich and silky — chocolate, cream, caramel and a gentle spirit lift
- Finish: Smooth and lightly sweet
How to Serve
Over ice, straight from the ref, or in coffee — a Baileys coffee is the most-used serve there is and it does not need a recipe. It also pours over ice cream and desserts, and makes the classic Mudslide and Baileys Espresso Martini.
Storage note: refrigerate after opening and drink within six months. Cream liqueurs are the one category of spirit that does not keep indefinitely.
